The Joy of Soy
Soy has been consumed in Asia for thousands of years and was considered one of the five sacred grains by Emperor Shennong of China. Soy was first consumed as a food in China during the Zhou Dynasty (1045-256 BC) when it was discovered that fermenting soybeans created foods such as miso and soy sauce. Soy was not introduced to Europe and the United States until the 1700s and it was not until the early 1900s that the US began to use soy for food. Before that soy was mostly used in the US for industrial purposes and to provide nitrogen to soil.
