Cinnamon Apple Cake

 Cinnamon Apple Cake

Ingredients

  • 2 to 3 large Granny Smith apples
  • 1/8 c. sugar
  • 1 1/2 c. flour
  • 1 tsp. baking soda
  • 1/2 tsp. salt
  • 1 tsp. cinnamon
  • 1/2 c. canola oil
  • 1/2 c. apple butter
  • 1/4 c. brown sugar
  • 1/2 c. vanilla WholeSoy yogurt
  • 1/4 c. water

Directions

Preheat the oven to 375 degrees.

Peel and core the apples, then slice them thinly. Toss the apple slices in a bowl with the 1/8 c. of sugar, and set them aside.

Sift together the flour, baking soda, salt, and cinnamon. In a separate bowl, mix together the oil, apple butter, brown sugar, yogurt and water. Add the wet ingredients to the dry ingredients and stir to combine.

Arrange about 3/4 of the apple slices in the bottom of a lightly greased 8"x12" pan, then spread the cake batter over the apples. Arrange the leftover apple slices on top of the cake and bake it in the oven for 20 25 minutes.

This cake is best served warm and sprinkled with powdered sugar.

    I love, love, love this recipe! I made it for the first time yesterday and I actually like it best the day after. That may be, though, because it was really, really hot when it came out of the oven and then I kind of left it to sit for a long while and then came back to it at room temperature! Still great!

    I didn't peel the apples but I will the next time I make this. I think that I will also chop the apples and then mix them in the batter. Hope it turns out well!

    This is an apple twist on a spice cake or, as I have been calling it, a cake that tastes like apple pie.

    In the end, this Cinnamon Apple Cake is just great in and of itself! Most, sweet but not too sweet, a dessert that is perfect for autumn and a recipe too simple not to try!
