Soy Caesar Salad with Herbed Croutons
Ingredients
- FOR THE DRESSING:
- 1/4 cup olive oil
- 3/4 cup plain or unsweetened WholeSoy yogurt
- 4 cloves garlic, minced
- 1/2 teaspoon salt
- 1/2 teaspoon black pepper
- FOR THE SALAD:
- 2 slices whole wheat bread
- 1 tablespoon olive oil
- 1 teaspoon oregano
- 1 large head Romaine lettuce (or lettuce of choice)
- 1/4 cup soy parmesan cheese
Directions
To make the dressing, in a medium size mixing bowl, whisk together the olive oil, soy yogurt, garlic, salt and pepper. (The dressing can be made ahead and refrigerated for up to one week.)
To make the salad, pre-heat the oven to 450°.
Tear lettuce into bite-size pieces and chill in a large bowl.
Cut up bread into small cubes. Toss bread in 1 tablespoon of olive oil and oregano and place on an un-greased baking sheet. Bake for 10 minutes or until brown. Remove from oven and set aside.
Just before serving, toss the lettuce leaves in the dressing, and sprinkle the croutons and soy parmesan cheese on top.
